Pumpkin Pie with Oats
1 cup quick oats
1/4 cup flour
3 tablespoons brown sugar
1/2 teaspoon cinnamon
3 tablespoons vegetable oilÂ
1 tablespoon water
1/4 cup finely chopped pecans
For the filling
3 large eggs
1/3 cup light brown sugar, packed
1/3 cup granulated sugar
1/2 cup heavy cream
1/2 cup milk
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1 1/2 teaspoons vanilla
1/4 teaspoon salt
1 can solid pack pumpkin
Blend brown sugar, flour, oats, cinnamon and pecans in a large mixing bowl till well blended. In a pie plate bake the mixture for 10 minutes and remove from the oven. Beat the eggs with 1/3 cup brown and the granulated sugar, vanilla, spices and salt. Blend the pumpkin and pour the mixture into the crust. Then bake for 10 minutes at 220C. Reduce the temperature to 180C and bake 40 minutes.
Pumpkin Muffins
2 cups flour
1 can pumpkin puree
1/3 cup melted butter
2 eggs
1/4 cup granulated sugar
1/2 cup brown sugar
1/2 cup milk
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon vanilla
1/2 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup chopped pecans
Melt the butter and beat the eggs. Combine flour, baking soda and baking powder, salt and cinnamon and blend. In separate bowl mix until blended the melted butter, pumpkin, milk, beaten eggs, sugar and vanilla extract. Into the dry ingredients stir the pumpkin mixture until moistened. On top put the pecans and do not overmix. Grease well muffin tins and dust with flour. Fill about 3/4 full and bake at 220Cfor about 25 minutes.
Pumpkin Cheesecake Pie
1/2 cup pumpkin puree
2 packages cream cheese
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla extract
1/7 teaspoon nutmeg
1/3 teaspoon ground cinnamon
1 graham cracker pie crust
In a large mixing bowl combine pumpkin, cream cheese, spices and vanilla, and with mixer at medium speed, mix until well blended. Pour the mixture into the graham cracker crust and then bake at 200C for around 40 minutes. Leave it in the refrigerator for one night and then serve it garnished with whipped toping.
